Heat 1 tablespoon olive oil in a large pot over medium heat. Add the diced onion, sliced carrots, and chopped celery. Cook for 5 minutes, stirring occasionally, until vegetables begin to soften.

Simmer Chicken in Broth

Pour in 4 cups low-sodium chicken broth and add the chicken breasts. Season with 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon dried thyme. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until chicken is cooked through.
