Boil Macaroni

Boil macaroni in salted water. Strain and set aside.

Prepare Roux

In a non-stick pan, melt 4 tbsp butter and add 4 tbsp flour on low to medium flame. Mix and continuously stir till it turns a gold biscuit color. Do not let this burn.

Make Sauce

Take off stove and slowly add 4 cups of cold milk, whisking all this time so no lumps form. Sprinkle oregano, black pepper, salt, red chilli flakes. Mix. Add mustard, vinegar and chicken stock cube. Mix.

Add Cheese

Now add the cheese. Let it melt on low heat. Check for salt and chilli/vinegar etc. Adjust accordingly. Add more water if the consistency is too thick.

Saute Sausages

In another pot, saute sliced sausages with chilli sauce in a bit of oil.

Combine and Garnish

Pour the sauce over the mac (in a Pyrex or glass dish) and top it off with the sausages. Garnish with fresh basil.
