Step 1

Heat oil in large saucepan over medium heat. Add onion and garlic; cook, stirring frequently, until onion is tender. Add broccoli, water and bouillon. Bring to a boil. Cover; reduce heat to low. Cook for 5 to 7 minutes or until broccoli is tender. Cool to room temperature.

Transfer mixture to blender or food processor (in batches, if necessary); cover. Blend until smooth. Return to saucepan. Add milk, cream and cheese. Cook over medium heat for 5 to 7 minutes or until heated through and cheese has melted. Serve immediately.
