Malai Boti Biryani

In a bowl take yogurt, cream, ginger garlic paste, salt, black pepper powder, green chili paste, white pepper, and crushed red chili, mix it well. Now add chicken in it and leave it for 30 minutes for marination.

In a pan heat 2 tablespoons oil, now add chicken pieces in it and cook until water dries completely and gives few pieces of chicken a dark brown color to give a BBQ look. Save the yogurt mixture. Now give it a coal smoke and keep aside.

In another pot heat oil, now add onion paste in it and cook until color changes. Now add the yogurt mixture, lemon juice, and zeera powder and cook until water dries and oil separates. Now add cooked chicken and green chilies in it. Cover it and cook for a minute or two, then close the stove.

In another pot add 6-7 glasses of water, add salt, zeera, star anise, dar chini stick, and bring it to boil. Now add rice in it and cook till 3/4 done. Now strain the rice.

In a pot layer half of the rice at the bottom, then layer cooked malai boti on the rice. Top with brown onions, fresh chopped coriander, mint leaves, and lemon slices. Then layer the rest of the half-boiled rice. In a small bowl add a pinch of yellow color, mix it with milk until you get the desired color, and spread on the top of rice. Leave it on dum for 15 minutes. Then mix it and serve with raita and salad.
