Blackforest Gateaux

For the cake, pre-heat the oven to 180 C and line your baking pan with baking paper/flour and oil. Now, in a bowl, sift flour and cocoa powder together.

Set-up a bain-marie (double boiler). Boil water in a metal pan and place a glass bowl on top. Mix egg, vanilla essence, and sugar in the bowl. Heat the mixture while continuously mixing up to 35-40 C. Take off the bain-marie and start whisking it using an electric hand mixer until light and foamy (ribbon stage), while it slowly cools down. Once cold, fold in the flour and cocoa powder mixture and add the melted Nestlé MilkPak Butter and mix it.

Divide the mixture into the 3 cake tins, 125 gm into each and spread them evenly. Bake in the pre-heated oven for 8 minutes or until a toothpick comes out clean. Cool it on a wire rack.

Boil water and sugar together and set it on the side to cool it down.

Whisk Nestlé MilkPak Whipping Cream and vanilla together till soft peaks form. Do not over whip the cream or it will become grainy in texture. Drain and coarsely chop the cherries. If using pie filling, set it aside.

Place the first layer of the cake on a plate and soak it with the syrup. Use the syrup generously over the sponge otherwise it will be too dry. Spread a thin layer of cream and place the chopped cherry on top. Cover it with more cream and spread it smooth. Place a layer of sponge on it and press gently. Repeat the same process to reach the desired number of layers and cover the entire cake with cream. Decorate the top with piped cream rosettes, cherries, and chocolate shavings. Chill properly before serving and enjoy!
